How We Choose

and we evaluate the hazelnuts
When dealing with a premium product like Langhe hazelnuts,
we demand the best; we are not willing to compromise.
Since 2000, we have been selecting Langhe hazelnuts directly from producers,
maintaining high standards that are valued by the food industry.

Quality selection: first and second choice

Our evaluation process begins right at the point of delivery: we inspect every load on-site—checking the freshly harvested hazelnuts—because we know that quality must be preserved from the very first moment.
After carefully weighing the batch, we take a sample and analyze the product's moisture content and quality. Based on the results, each batch is assigned to the most appropriate quality tier—first or second choice—ensuring maximum transparency for the grower and fair recognition for the work performed.

Yield on a clean, dry sample

Hazelnut growers have until May 31 of the year following delivery to finalize the yield and sell their shipment. Flexibility designed to help every producer plan sales with peace of mind, based on their own needs and market timing.
The yield is calculated based on a one-kilogram sample of dried, cleaned, and shelled hazelnuts, from which visibly defective hazelnuts are discarded. The valid percentage of the dry, clean sample forms the basis for determining the final net yield, using a method that is clear, mutually agreed upon, and transparent for both parties.

Quality Award

The final stage of our process is dedicated entirely to quality. One hundred hazelnuts are taken from the yield sample and, using a special cutter, are sectioned and analyzed one by one.
This process allows us to precisely define the price bracket best suited to the shipment, ensuring that every grower receives financial compensation truly commensurate with the quality of their harvest. Because an excellent product always deserves its true value.

Cleaning, drying, and storage

Once the harvest is complete, Destefanis & Novero handles every subsequent stage, relieving the grower of any logistical concerns. The hazelnuts are carefully cleaned, dried using specialized technologies that preserve their organoleptic characteristics, and stored in suitable facilities.
At the end of the process, the product is ready: delivered directly to processors in perfect condition regarding quality and food safety.
